Honey-Pecan Chicken
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 skinless chicken breast halves
  • 8 chicken drumsticks, skinless
  • 1/4 cup honey
  • 2 tablespoons dijon mustard
  • 3/4 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1 1/4 cups crushed corn flakes
  • 1/2 cup finely chopped pecans
  • cooking spray
  1. Preheat the oven to 400
  2. Season the chicken with salt and pepper
  3. Combine the honey, mustard, paprika and garlic powder in a bowl big enough to dip the chicken in
  4. Combine crushed cornflakes and chopped pecans in a shallow dish or a bag, and mix well
  5. Dip the chicken into the honey mixture to coat and then dredge in the cornflake mixture
  6. Place chicken pieces on a large baking sheet coated with cooking spray.
  7. Lightly coat chicken with spray
  8. bake at 400 for 40 minutes, or until done.
