Honey-Pecan Chicken
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 skinless chicken breast halves
- 8 chicken drumsticks, skinless
- 1/4 cup honey
- 2 tablespoons dijon mustard
- 3/4 teaspoon paprika
- 1/8 teaspoon garlic powder
- 1 1/4 cups crushed corn flakes
- 1/2 cup finely chopped pecans
- cooking spray
- Preheat the oven to 400
- Season the chicken with salt and pepper
- Combine the honey, mustard, paprika and garlic powder in a bowl big enough to dip the chicken in
- Combine crushed cornflakes and chopped pecans in a shallow dish or a bag, and mix well
- Dip the chicken into the honey mixture to coat and then dredge in the cornflake mixture
- Place chicken pieces on a large baking sheet coated with cooking spray.
- Lightly coat chicken with spray
- bake at 400 for 40 minutes, or until done.
