Cajun Chicken Breast
  • 2 Tbsp Butter
  • 4 Boneless Skinless Chicken Breast Halves
  • 1 Lg Onion -- chopped
  • 2 Green Peppers -- seeded and chopped
  • 2 C Tomato Juice
  • 1/4 Tsp Cayenne
  • 1/4 Tsp Dried Thyme
  • 1/4 Tsp Garlic Flakes
  • 1/4 Tsp Ground Cloves
  • 1/4 Tsp Ground Allspice
  1. Melt butter in a heavy skillet.
  2. Add chicken and brown on both sides over high heat.
  3. Remove to a tray or platter.
  4. Add onion and bell peppers to skillet.
  5. Cook over moderate heat until soft.
  6. Add tomato juice and seasonings, return chicken to pan.
  7. Simmer until sauce thickens.
